What is the harvesting process at Stanton Orchards?

We harvest our Montmorency tart cherries during July and August on the Stanton Orchards farm in Lake Leelanau, Michigan. Our tree-ripened tart cherries go through a harvest process that includes gently shaking the cherry trees and ultimately catching the gentle cherries into tanks of hydro-cooled water to immediately lower their core temperature and significantly help preserve their important phyto-nutrients. Then we chill the cherries further to 34 degrees with our fresh water cooling pads. The cherries are then transported to a refrigerated processing center where we press them into concentrate.
