Scrumptious Summer Salad With Kale and Dried Cherries

 

Loaded with powerful antioxidants and vitamins this easy-to-prepare salad can be your go-to recipe for early or late summer dinners for your family and friends. Our version of this stunning summer salad is as follows:

RECIPE: Scrumptious Summer Salad With Kale

  • Serves two as a large salad. Serves four as a smaller starter salad.
  • 2 cups of shredded raw kale
  • 1 cup of torn fresh spinach leaves (or mesculin or romaine)
  • 1 cup of Stanton Orchards Montmorency Dried Tart Cherries
  • Optional additions: cherry tomatoes, cooked diced squash, feta cheese, sliced almonds

Toss all together in a big bowl.

Dressing:

  • ¼ cup olive oil
  • 2 Tablespoons lemon juice
  • 1 Tablespoon honey
  • 1 teaspoon white wine vinegar
  • 1 teaspoon Dijon mustard

Pour the lemon juice, honey and vinegar in a small bowl. Stir to combine.

Then add Dijon mustard and olive oil and stir again to combine.

Salt and Pepper to taste.

Optional version: Simply use the olive oil and white wine vinegar as a dressing

Pour on salad and toss to combine.

Optional add-on drizzle for those loving a tangy taste to their salad: Combine 2 Tablespoon of Stanton Orchards Tart Cherry Concentrate with 1 Tablespoon of balsamic vinegar and 2 tablespoons of water. Tip: Serve this extra salad drizzle in a small pouring glass/cup on the table.
